About the Role

JOB DESCRIPTION:

  • Leads the technical translation of all approved bakery formulations into commercial production standards.
  • Conducts formula validation, test bakes, and process standardization to ensure accurate scale-up.
  • Owns and maintains baking standards, manuals, specifications, and process flows.
  • Ensures formulations remain consistent despite raw material variability or equipment differences.
  • Updates technical documents when improvements, corrections, or product enhancements are approved.
  • Ensures Production receives accurate and complete technical documentation (batch sheets, mixing parameters, baking profiles, etc.).
  • Monitors dough development, fermentation behavior, mixing efficiency, baking curves, and finishing quality.
  • Conducts root-cause analysis for baking defects (texture, volume, crust color, spread, shrinkage, etc.).
